Cheesemonger Courtney isn't blue - she'd just like you to check out our “blues” - because we’re building quite a selection! “Blues” are wonderful summer cheese - great on salads, crusty bread and red wine, great picnic cheese, or on a cheese board. And let’s not forget what they can add to a burger! Check these blues out for July:
BLUE D’AUVERGNE: $15.59 / lb - A French classic with a firm but creamy texture. Medium to strong spiciness, excellent in salads or with crusty bread drizzled with honey.
MAYTAG BLUE: $20.79 / lb - Still made in Iowa from the same 1941 recipe obtained from Iowa State University! Similar style to roquefort and aged 4-6 months. Dense, creamy, moist and crumbly.
CAPRA BLUE: $27.15 / lb - An Italian cheese, a nice blend of goat and cow’s milk. Medium veining and the blending of the two milks make this a unique blue.
BUTTERMILK BLEU: $14.69 / lb - Produced from raw milk this is a perfect beginner’s blue! Complex, creamy, piquant with moderate veining. Made in Wisconsin by Roth Kase.
BLUE SHOPSHIRE: $15.59 / lb - An English beauty - infused crocus-yellow paste mapped with blue-green mold. Moderately salted with Stilton’s mellow flavor. Perfect pairing with Port!
